But I would want them to melt.  Then they would drip down the cake...  If anyone is curious, I did make an angel food cake out of turkey eggs and it turned out really good!  I think it was higher than when I use chicken eggs... I know the egg white whipped up higher!  And can't say it was because the whites are bigger because 1 1/2 cups of egg whites are still 1 1/2 cups wether they are chicken or turkey.

We have the holiday bracketed - mine's the day after Christmas. It always seems like an afterthought with all the other celebrating going on; even I have forgotten it a few times!th.gif
