Well I'm really considering making a career out of art and I'd really like to expand out of just horses, sadly the whole world aren't horse lovers.

Here are the typical ways I shade (sorry for bad picture):

I generally follow the curve of the shape (in this case, a gryphon toe) with light strokes and gently press harder as I go. Don't be stiff with your shading! It can make your drawing look unrealistic and flat. Let the pencil lie somewhat loose in your hands, but firm enough to control (this develops naturally with your own unique drawing style). For the highlight on the talon, I pressed fairly hard (not hard enough to dent the paper, however) on the bottom of the curve and partly up the tip. I left the rest white. Then, to make it look less flat, I took my pencil and used light stokes to blend the "colors" together.

Above is the typical way I draw a gryphon (or bird-of-prey's) beak. The "lips" that stretch past the chin are soft and fleshy-good for expressions.
