Even with full sized chickens and ducks, I like to cut up the back to where the thigh swings free. It makes it so much easier, especially to reach the lungs.
 
The only issue with putting it in the garden was that there is a very large prevalence of a bear up here...don't want that ANYWHERE near my birds! A neighbor dispatched a coyote in his backyard last week also.

Yikes that's scary. I actually will bury mine if the ground isn't frozen enough and I can get the shovel into it. Buried deep enough and there isn't much smell for any animals to find. If you are really worried about predators though you can actually burn it in a burn barrel outside and then spread the ashes on your garden. That's what I have to do when it's too cold to dig holes lol.
