jersey giants

I only have experience with two sussex birds and they're both SUPER flighty, and kind of a pain because they're smart enough to get out on occasion. Just fyi :)
 
We have JG's and they are about 3 1/2 years old. They are huge. We dont think they are laying. We have 13 hens right now but only 3 eggs a day. 7 of them are about 1 1/2 years old. Those are the ones that are still laying. We just 4 days ago came out of a 5 month period of no eggs. I about wanted to put them all down. Thats too long of no eggs. We have one hen thats 6 years old. We call her the *****. We are just not sure if pur JG's are going to be yoo tough to eat. We have not gone through the process of putting them down and prepping them for the freezer.
 
The most delicious chicken I have ever had was Jersey Giant capons that my mother used to be able to get when I was a kid .... more than 40 years ago. Nothing since has come even close for flavor in my opinion. She would braise them more than roast them. I would like to try and duplicate that flavor some time in the future. If it were possible I would not care how long the birds took to grow or their feed conversion or anything else.
With me, quality always wins over quantity and expense.
 
Try loosening the skin like one would a turkey and getting some herbs and butter in which crushed garlic and ginger have been sautéed under there. It will do more good than the bacon. Not the bacon is bad, never ......
I'm itching to grow some of these birds.
 
Allen: You are making my mouth water. What you describe is what my mom used to get more than 40 years ago and I haven't yet had better chicken anywhere. I would dearly love to get my hands on one of those ....
