If you are waiting for a hen to go broody, you could be waiting a long time - until way after the eggs are rotten. I wouldn't save any eggs in the hopes a hen will go broody. Just having broody breeds doesn't guarantee a broody hen either. I've had two BO's for three years who have never gone broody, while my BSL, who shouldn't even consider it, went broody last August - when temps were in the triple digits for the entire time she was sitting.
Go ahead and eat your eggs. When you have a broody, then is the time to think about saving eggs for her.
