That's the hygrometer I use. It's spot on.

The best turkey I ever had I made roasted with a slice of fatback on the top of the turkey so it dripped down and kept it moist. Can you tell I'm from the south? lau.gif

 

Happy Monday... gunna be 76 here today, felt like summer yesterday. cool.png

DH introduced me to a way of cooking a turkey that works really well.  Instead of cooking it breast up, you cook it breast down.  That way all the juices stay in the white meat and it is never dry.  It may not make for a "picture perfect" turkey because the breast doesn't brown up but it sure is good.  We also cook in the roasting bags.  I never have to baste the bird.

My Golden Campine eggs from Debs_Flock are still being bounced aound the Postal System  somad.gif   so I set 6 Icelandic eggs yesterday for my turkey tutors.  I've ordered an Eco Glow 50 and Spot Check from Brinsea and hope they arrive without the delay that the eggs are experiencing!

 

Turkey sausage, turkey in a roasted bag, turkey ala Alton Brown...droolin.gif  How long before these Bourbon Red eggs are big enough?!

I've used a lot of different hygrometers.. and I ended up with those.. absolutely love them and the fact that they can be adjusted if they are ever off

I follow the Porter method too or should we now call it the Yinepu Method . . .. .In my LG I can get to 80% RH easy. THe higher humidity makes the shells softer if I remember correctly.

 


I'm having a hard time keeping 40% - 45% RH in my LG.  How many troughs do you have filled?  I think I will have some new kids by this time tomorrow.  I gave the nannies Selenium/E gel 2 weeks ago.  Do you think I should give the kids some too?

 

 

I use sponges, notecard size, about 4 ,wet with warm water and squeeze out some for a quick up in RH. OTherwise I cut a sponge into 4 strips, set into a baby food jar of warm water, with the sponge set like a sky scraper, the more sponge out tof the water the more moisture evaporates into the air.

 

YES--give the kids Vit E/Se as little girl is having a problem. ( In her case this may not be a nutitional problem, rather the extra nutrients help support her.)

I roasted a bird last weekend, and I'm just not satisfied with how my roasts are turning out. Until putting the BBW in the freezer last fall, I could roast a perfect bird. Not there yet  with the BBW. . . 

This, hands down, is the best turkey recipe I've ever used.  Every person who has had my turkey since going to this recipe says it is the best turkey they've ever had.  I am always asked to fix the turkeys.  Most people overcook turkey, not if you use this recipe to the T.  I swear, try it and you won't regret it.

 

I'm kind of a science geek, so Alton Brown is my go to guy, a combo of Iron Chef and Bill Nye the Science Guy.  Your brine has to be the correct ratio of salt/sugar.  There is a scientific basis to the ratio.  It causes the normal moisture to come out of the bird and exchange for the moisture in the flavored brine.  Just cook any dressing on the outside of the bird.  If you stuff the bird, you'll have to overcook the turkey in order to get the dressing safe to eat.

 

There is no recipe I can sing the praises of beyond this one!

I love the show with Chris Kimbel--there's a lot of science in cooking! A great way to get kids hooked into science and chemistry. ANd we love BIll Nye .. . . . Will check out the recipe, thanks for sharing.

I'm all for meat and fat, it's the flours and cakes that cause problems. I've been a fan of Atkin's, only diet I can stick with, and like the decrease in my cholesterol--Primary likes the 170, down from 195; and I can keep my A1c lowered. ( cake and too many fruits and pancakes send it upward).  ANd fat tastes good!

I FORGOT TO DO THIS!!  I usually turn the bird breast side down. TIme to defrost another one.

The first time I tried this method I really missed having the browned skin over the breast meat.  It still "bothers" me but it really does keep the white meat very moist.  DH keeps saying you can turn it over if you want, I would rather have the meat come out right than the turkey "look nice". smile.png

That would be some incubator if a roast turkey popped out of the egg jumpy.gif

 

And now that the eggs have finally arrived (I pointed out to customer service that I could have driven them there myself in less time), let's hope they aren't too geriatric & bounced from their many days as hostages.  I swear, how does their website say they are "out for delivery" when they are in the wrong city?  "CS" told me with Priority Mail the tracking number only indicates when it's delivered, it really isn't intended to track the package.........................really????

I have heard this before.  I understand no updates when the packages are in the hands of FedEx (for the flights from what Renee explained) but if they are going to give a tracking number, use it as a TRACKING NUMBER for pete's sake.

I was just floored that the box was scanned into the wrong city and read "out for delivery".  The address was the address of the post office itself in the correct city.  This was not a handwritten couldn't read it label.  It was a computer printed click n ship label with a bar code.

 

The website read they had the box on the 15th, with an expected delivery on the 12th.  Unless it was in a timemachine, that was not possible.
