All animals go through this process. If you have a dry cool place to hang them once they've been butchered, hang them! Just like a side of beef or a hog or even deer. I duck hunt, I sometimes leave a duck hanging from anywhere between 2-7 days!! It'll help the flavor as well. In the Far East they will nail a ducks beak to a bored hung in the shade and when the bird falls away it's ready to cook. I don't go that far, but letting them hang, they'll be out of rigor in no time.
