Hard Boiled eggs in WHAT?????

Being as that we always have eggs on hand, this isn't the ONLY time of year we may have extra hard boiled eggs, but it is a fun time to discuss what you do with them.  I actually saw a recipe for chocolate chip cookies that used hard boiled eggs.

 

What are some of your favorite ways to use up HBE?

 

I think I will actually try my hand at Scotch Eggs this year and may even give that CC Cookie recipe a shot.

I love them on salads, or sliced into otherwise vegetarian sanwiches.  I also will dice them up and saute them with noodles and broth.  The yolk kinda dissolves and thickens the broth into a sauce if there is just a little broth.  I have a recipe somewhere that is a sauce made out of minced hard boiled eggs but I can't remember the name of it.  I need to find it cause I'm really curious how it turns out..

I actually like hard boiled egg in my tuna salad.  I was also thinking of trying creamed hard boiled eggs over toast for dinner.  Was on ALLRECIPE.COM and there were several cookie recipes with hard boiled eggs.

 

I just boiled about 2 dozen and will boil another 2 or so tomorrow.  I  wonder how many different hard boiled egg recipes I can try over the course of this next week before there is a revolt?

I have a couple middle eastern cookbooks and there are recipes for stews where they cook hard boiled eggs slowly in the stew so that the egg picks up all the broth flavors.  they get simmered for hours and are served as a garnish on top of the stew.  And then of course there is the chopped liver- onions, hardboiled eggs, and liver ground up together to make a pate-like consistancy.   Hmm, I've got a lot of world cookbooks- I'm gonna have to go look now . . . .

My husbands polish family puts them in cream of mushroom soup... sickbyc.gif
Also with boiled potatoes and kielbasa...

My grandmom used to put hard boiled eggs in her Sunday gravy (spaghetti sauce). Every Sunday she would empty out the meat leftovers from the dinners she made during the week and she would cut up all the meat and toss in a few hard boiled eggs and just let them simmer in the sauce. I am wondering now though if the eggs were raw and they just cooked in the gravy or were they actually hard boiled before they went in. I would think you could do it either way.

I always put a finely minced hardboiled egg in my tartar sauce, along with a few capers, pickle relish, onions, and 2 dashes of Cholula!

eggs goldenrod, is a creamed gravy made with chopped boiled eggs, you make a butter rue with cream and add chopped eggs and serve on toast or with biscuits or rice. Very good my mom used to make ll the time i will have to ask her if my memory isnt right about the creamed eggy gravy.

I tossed a coupled crumbled up hardies in my pasta salad. Really not a big fan of hard boiled but figured in the pasta, won't even notice but gave it a nice flavor. I got 2fl.gif from my DW so all is good. Although she tends to be a little jealous of my culinary crafting without any formal training other than spending hours upon hours with my little Italian grandmother in the kitchen.

I put  hard boiled eggs in my tuna salad and my husbands fam all thinks i am nuts, but it taste good to me :)

My dad used to make creamed hard boiled eggs over toast, yum!!
