16 eggs from 15 hens? Your thoughts please

I have 15 hens, 10 white leghorns and 5 red stars (also have 9 chicks).  Every day I get 14-15 eggs, normally 10 are white and 4-5 are brown.  On a rare occasion I only get 9 white.  Anyway, yesterday I got 6 brown and 10 white.  On Tuesday there were 15 eggs, so I know I didn't miss one the day before.  I thought each chicken laid at most one egg each day.  I know that sometimes a hen will miss a day.  Any ideas?  Has anyone else had this happen?  Is this a normal occurance?

1 Silkie Rooster, 1 Bantam Brahma Rooster, 2 Blue Copper Marens Cockerels 1 Banatam Brahma pullet, 7 EE pullets,  4 Silver Laced Wyandottes, 2 barnyard x pullets, 10 Pearl White Leghorn hens, 5 Red Star Hens, 2 dogs, 2 horses, 4 sons, 1 grandson, and....Chicken Math has already taken hold here

I've had people tell me hens can lay two eggs a day, but I've always thought that was on old wives tale.

My white leghorns has layed two eggs in one day once, one very early in the morning, one in the afternoon. So yes, I would say it is possible, especially because you have white leghorns, the queens of egg laying! I've seen it happen on here other times, too.

I have five hens and two pullets- one seven year old red star, Luna, one white leghorn, Sage, one SLW, Pepper, one adorable fluffy EE, Bedazzle, and one black star, Buckbeak. My two pullets are Nutella, my wheaten marans, thirty five weeks, (who is yet to lay an egg!), and her best friend, Sammy, seventeen weeks.

I used to think the same "one egg per hen per day" but we had 3 cuckoo marans hens and we got 4 eggs twice in one week from that pen.  I know we didn't miss any and we pen our birds by breed so no it couldn't have been another hen in there, lol.
