Why not just thump it on the back of the head to knock it out before hanging it up and cutting the throat? It's going to flop in those last seconds anyway, so no matter how you do it, the body will go through certain gyrations as systems shut down. If that is what caused you drama...er...I mean trauma....then I'm doubting you'll escape that with any method. It's easier to just use a killing cone, cut the throat quickly and then just walk away and do something else until the bird is good and dead, no more movement. Easy.
