Can you use "regular" pasta/noodles in Chinese dishes?

I have to bring some sort of Chinese dish to my son's Boy Scout potluck dinner.  I was going to bring fried rice but several other folks already signed up for that, so I'm going to make up a stir-fry with noodles.

 

Could I use regular pasta instead of the pricey oriental noodles I find in my grocery store?

 

This is what I've planned:

 

Break regular spaghetti in half and cook al dente

 

In my electric skillet stir-fry some onions, grated ginger root, celery, carrots, & broccoli

 

Add some cooked chopped chicken to the pan and mix in with the vegs

 

Beat a few eggs and add to the pan, stir so it cooks in little pieces

 

Add the cooked spaghetti & some soy sauce and mix all together

 

 

Is there anything else I could add to make it taste more Chinese-y?  I like to cook basic & healthy, without adding anything processed or artificial.  This doesn't have to impress the Chinese Ambassador, just satisfy my son's fellow Boy Scouts & their families.  Each section of the troop chose a different country and now their moms have to prepare a dish of that type of food.

I have used angel-hair pasta in Asian dishes. I like that it is thinner than spaghetti and mimics a rice noodle a little better. Sounds like a delicious dish you have planned!

You can. Or you can use Ramen noodles for more authentic.

I thought of the angel hair pasta too.

You could add Baby Corn, Bamboo Shoots, or Sugar Snap Peas.

And I like Dark Sesame Oil with Toasted Sesame Seeds in anything Chinese-y

For a chinese taste you can add Chinese 5 Spice Seasoning.  I think you might be able to get it at the grocery store. It is a mix of 5 spices: China cassia cinnamon, star anise, anise seed, ginger and cloves.  I buy my spices from a Penzey's Spices and they have a really good mix.  I tried it once, just to see what it was like, and have been hooked ever since. 

 

If you can't find the mix, just sprinkle a little cinnamon and cloves on your mix, it will really add some depth of flavor to your stir fry.  Maybe try a small sample before making the big batch to take.

I myself don't care much ramen noodles since Im not fond of the mushy texture. I have developed the taste for the Panda Express noodles. I want to duplicate it but don't know how. But we use rice noodles too and like those.

 

What you have planned sounds good. Let us know the outcome of your dish.

Thank you all for your suggestions.  I made this tonight for our Boy Scout banquet and it turned out all right!  Here are the measurements:

 

Break 1 pound box of regular spaghetti in half and cook al dente

 

In your electric skillet stir-fry 2-3 bunches scallions, 1 T grated ginger root, 6 stalks sliced celery, 1 lb sliced carrots, & 3 chopped bell peppers (I bought red, orange & yellow ones for their color)  You could use broccoli instead of the peppers, I was going to use 1 bag of frozen florets.  You can add other seasonings here too.

 

Add 1 pound cooked chopped chicken to the pan and mix in with the vegs

 

Beat 3-4 duck eggs and add to the pan, stir so it cooks in little pieces

 

Add the cooked spaghetti & some soy sauce and mix all together

 

This made a LOT, it filled the electric skillet to the top, filled up my big yellow Pyrex mixing bowl.
