Quail eggs: recipes and details

Hey guys,

We have about a dozen California quail eggs that have been laid over the past couple weeks.  They are likely fertilized, but we aren't going to incubate them.  How long are they good for when refrigerated?  Do you have any recipes for them?  Or conversions rates to a chicken egg if, say, I wanted to make quail brownies?

They will be going to their new home in a week or so but I'd like to make the most of the eggs we have so far!

I read somewhere it's 9 quail eggs to 1 chicken egg, but I'm hoping someone can clarify for me!

Also, here's are a few recipes I've been eyeing for a while...

--Poached quail eggs with leek, julienned zuchini and salmon! http://www.latartinegourmande.com/2011/03/17/eggs-en-cocotte/

--Bacon, egg and leek risotto (but in smaller portions so that there's two quail eggs per portion!) http://smittenkitchen.com/2012/05/bacon-egg-and-leek-risotto/

--Breakfast pizza http://smittenkitchen.com/2010/03/breakfast-pizza/

--Fried egg sandwich with bacon and bleu cheese http://smittenkitchen.com/2012/02/fried-egg-sandwich-with-bacon-and-blue-cheese/

--Teeny tiny scotch eggs http://www.waitrose.com/home/recipes/recipe_directory/m/mini_scotch_eggs_with_quail_eggs.html

Can you tell I'm a foodie? :P

I'm a city girl with a country heart! Trying my hand at a house quail or two this summer, let's see how it goes...!

board contains stuff for "nesting" for my future quail, things to do with leftover eggs and shells, awesome quail decorum, amongst other cool pet related things...

I say 3/4 per chicken egg.Crack  1 chic egg into measureing cup note volume then crack enough Quail eggs to equal that volume count and there's your answer. I have four kind of Quail, Jumbo brown and A&M  both are Coturnix .They are by far the biggest eggs ...I have Georgia Giant and Butler  both are Bobwhites. Even though they are about the same physical size  as the Coturnix  there eggs are not nearly as big...cva34
