Starting New Project and need ideas?

Have some free pens and resources for a new project.  What large, rare, heritage, obscure, hard to find, in demand breed would pick if you were starting from zero with space, resources, and time?  I look forward to seeing some suggestions and if you have leads on where to a start that would be great too.

Thanks heritagehabitfarms - Both of those are great ideas.  Any ideas where to find a good source of stock to start a flock of houdans?  I know Cackle Hatchery of Missouri has them, but you know of any breeders?

You ever see any Columbian Marans?  I have looked and looked for a breeder, but have been unable to find any birds.
