strange lumps or nodes inside neck above crop on CX

I butchered three 8 weeks old CX cockerels yesterday and when removing the windpipe and crop I found some strange nodules or lumps above the crop- but only in two of the birds. I don't recall seeing this on the other 3 birds I did last week.  Does anyone have any ideas? Lymph nodes? Fatty tumors?  The necks went into the stock pot but I gave the lumps to my dogs...in the pics below the lumps are to the right of the neck, on top of the skin. The windpipe and esophagus are pulled up out of the pic for clarity.

I've seen these sometimes in our birds and am curious as well.

OK, I have been told that they are the thyroid and parathyroid glands, so mystery solved!

Very normal stuff as long as they are nice and fleshy colored :)

Ill be doing my processing in two weeks so i will look for that too. i used to work in a commercial turkey processing plant but when your cleaning turkeys at mock 10 speed you dont even notice abnormalities. thats for the 3 vets that are working the line each day.
