Using shackles

I have purchased a processing setup detailed in the below linked thread. With it came a kill cabinet that includes 4 shackles for hanging and bleeding birds. I am curious how you use these. They are supposed to hold 5 birds at a time. I have seen them used to dunk and scald, but not kill or bleed the birds.

Some folks also use them at the eviscerating table.

Anybody here with experience with these willing to pass on a few helpful hints?

Can you take some close up shots of the shackles? I want to make a set to hold 2 birds for plucking. I don't know how well yours will work for killing and bleeding. I have not processed birds before. But this winter I am going to start gathering and building a basic set up. I plan to do birds in twos. thanks and good luck.
