My family only deep frys food about 1 time per month (12/365 / .01 century). We usually use whats labeled here as vegetable oil. Alot of people fry in crisco shortening. Peanut oil is better (imho). Canola oil is becoming more popular here. We use a good bit of olive oil but not for deep frying.

In a big fryer u can reuse the oil. I always keep fish grease seperated from pork/chicken/beef grease (oil for metric). I strain and put it back in the container and use it for years.

Hey I heard that once you heat up oil hot enough to fry with it goes rancid quicker...  Your used stored oil... do you keep it chilled somehow.  And do you filter it for little floater bits before you store it....?

I like hot too.  Hotter and Dryer the better.  makes me wonder why you settled in Alaska?  Though I do adapt well to cold I have never lived where snow and ice were real issues to deal with.
