How do you know when to pull them out of the ground?

Depends on the variety, but for me I pull when there are around 5 healthy leaves left on the plant. You can always check on how your bulbs are doing. Garlic roots grow down below the bulb so you can gently dig away some of the soil to check on them if needed.

Wow! Nice!! What varieties are these? And how did you get the roots so gleaming white?? Mine usually still has little clumps of dirt on them.

Great looking garlic.

Mine didn't do as well this year, small heads.  I'm working the bed to plant with next years crop sometime in September depending on the weather.  I put a good bit of chicken compost on it and hope that will help next year's crop.

My garlic was doing great... til the mini donkey decided she loved the taste.. silly girl pulled up and ate all of my onions too.

I have a few garlic bulbs still in the ground.. really need to pull them and see if they managed to survive her eating them off to the ground (most of them she pulled up and ate the entire thing)

That is some gorgeous garlic! It's one of my favorite things to plant, can't wait until fall to put more in :)
