Baking Question

Fellow bakers, please advise.

 

The cake is already in the oven but I dont know how its going to turn out...I needed 3 eggs and this morning I got my 3rd full size egg so I started making the batter. When I cracked the eggs the first one was a double, then the second was a double, and you guessed it, the third was a double too. The yolks looked smaller than chicken size so I went ahead and used all 3 eggs. In about 20 minutes I will know if the cake has cooked properly but I wont know how it will taste until this evening.

 

If I keep getting doubles how do I manage them for baking?

4 Rouens, 3 Khaki Campbells, 2 Indian Runners, 2 Embdens, 6 Silver Laced Wyandottes, 2 horses, 4 cats, 2 dogs

I just use them like eggs.  Extra egg won't hurt baked goods and extra yolk just makes it richer.

I only got doubles when the girls first began laying now i get singles, i find for cakes/cupcakes if it calls for 3 eggs i only add 2.. i read somewhere a standard duck egg is equal to 2 chicken eggs? I know i can't make peanut butter cookies with mine, i need chicken eggs since the recipe i use calls for 1 egg.

The cake (devil's food) came out very rich but a little denser than usual. I think 5 yolks would have been better than 6. smile.png Hopefully I will start getting single yolkers. At least until I get the hang of baking with these different eggs.

But the real question is .... did it taste good big_smile.png

 

You could break each egg into a cup before adding it to the cake batter one by one, if it is a concern.

I thoroughly delight in using my duck eggs for baking!

One wonderful wife, one son and daughter-in-law, 2 great grandkids, 1 neato gray tabby cat, and 6 Khaki Campbells
