Now that I have a couple dozen jars of blackberry jelly, DH would like me to make a cobbler out of the next few quarts I pick. I've never made a cobbler before, so does anyone have a great recipe that they could share? Thanks! ~kat

I didn't realize that a cobbler is any different than a pie other than the shape. I just make a pie crust, put in my berry sugar mix, cover, sugar the top shell, vent and bake. I will watch to see what others will say. May get a new favorite recipe ;)

Most of the cobbler recipes I have found seem to have a sort of "dumpling" top to them. A dough that is made up and dropped by spoonfuls on top. But DH seems to remember that Grandma's cobbler had a lattice top.

I'm thinking, that Gr'ma must have made a pie, LOL.

Easy peasy:

1 cup sugar
1 cup self rising flour
1 cup milk
2 cups blackberries (or peaches, fresh cherries, etc.)
2 to 4 Tbsp butter or margarine

Melt the butter in an 8" square pan. Whisk sugar, flour and milk together. Pour over butter. Place fruit on top. Bake at 350 for 30 minutes or til brown.

To make self rising flour: 1 cup all purpose flour, 1.5 tsp baking powder, 1/2 tsp baking soda

The crust will rise to the top during baking.

You could also just add sugar and some pats of butter to the fruit, then cover with a store bought pie crust. I prefer this one; the crust is much like biscuits. You can vary the amounts to taste, just keep the milk and SR flour ratio the same.

We used to call this impossible pie.

This is basically the recipe my mother has used for 70+ years to make cobblers of all kinds. The batter does rise to the top and develops a nice crustiness that is really delicious. Our recipe calls for a stick of butter - and we usually add a little sugar to the fruit before adding it to the pan. I've even used this recipe with canned fruit - and it still turns out great.

I think I may just do the cheat method and top it with a store bought crust as you suggest, that sounds more like what he remembers (and SO much easier than a "real" pie, LOL) I may make the cobbler recipe you shared the next weekend and then he can see which he prefers.

Looks like tomorrow morning will be the next picking. I've been going over to MIL's every 2 - 3 days and they finally are starting to slow down. I only got one quart on Wednesday. We had a lot of rain last night, so I'm hoping it didn't knock a lot of berries to the ground - I don't like sharing with the critters, LOL

I've done flockwatcher's recipe, basically, with the proportions a little different.

Melt 1 stick butter in pan while preheating oven to 350
Mix 1 c each flour, sugar, milk. Add 1 tsp baking powder, mix well. Pour this mixture onto melted butter. It displaces the butter and makes the best corners lol. Spoon a quart of sweetened berries on top in big spoonfuls. Bake 30 min or until gold on top. Serve with vanilla ice cream.

Works lovely with peaches, also. Strawberries, not so much.
