I'm in the mood to bake some cookies and I'm sick of my usual recipes.

I don't normally bake cookies but I'm having some people over Friday night and thought I'd whip up some deviled eggs, egg salad, cookies, snack foods... mostly egg based(over 100 eggs in the fridge)  I plan on going shopping in the morning after I clean the house.  I like simple recipes but I don't mind being adventurous.  So if you have any recipes that come to mind and want to share I'd be happy to listen.  I might make 2 or 3 different kinds of cookies depending on how it goes.

gig.gif seriously, though. I just use the recipe on the back of the bag of chocolate chips to make my chocolate chip cookies. You do realize chocolate chip cookies are the ONLY flavor of cookies...right? gig.gif  Good luck!

Crisp up a few pieces of bacon and chop them into little bits, add to any cookie dough, yum!

These are really good cookies. Cooky cookies.

 

Ingredients

  • 1 cup vegetable oil
  • 1 cup butter, softened
  • 1 cup white sugar
  • 1 cup packed brown sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 3 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup cornflakes cereal
  • 1 cup rolled oats
  • 1 cup chopped walnuts
  • 1 cup unsweetened flaked coconut
 

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Beat butter and sugars until fluffy. Slowly add oil and beat until oil is well incorporated. Add egg and vanilla, beat to mix.
  3. In a small bowl, combine flour, soda and salt. Add to butter mixture and stir just until mixed. Combine corn flakes, oatmeal, nuts and coconut and add to cookie mixture; mix just until combined.
  4. Use a cookie scoop to produce consistently sized cookies, but you can drop by rounded teaspoonfuls onto an ungreased cookie sheet, if you don't have a scoop. Bake at 375 degrees F (190 degrees C) for 12 minutes or until lightly browned. Since these are so rich, you can chill the individual balls of cookie dough and then freeze them in freezer bags. You can then take them directly from the freezer to the oven, just add a few minutes to the cooking time.

Make chocolate chip cookie dough with chocolate chips, then add 1/2 cup of M&M's, 1/2 cup nuts, 1/2 cup shredded coconut, 1/2 cup raisins. Yummy!
