Rhetts, I can't remember how big your flock is....but you can freeze eggs. You just scramble them and freeze them raw. Supposedly they taste just great for breakfast and you can use them for baking too. I'm going to do that this year because I was mad last winter that I had to buy eggs in Jan or Feb. I'm going to use the teeny quarter pint jelly jars - I have six left, and then some other kind of container. no idea what yet though.
IKEA has mini silicone muffin things that are the perfect size to freeze an individual egg. I bought 12 to start freezing eggs. We are at five eggs per day.
