Separating roosters and hens

I am new with chickens, and don't know whether or not to separate hens and roosters. I don't want to hatch little ones all the time because I dont know what I would do with them. Back to the main thing, if I have to separate the hens and roosters, how should I go about that?

you can keep them together without little ones, just get the eggs out everyday and refriderate them and none will hatch.

Our ladies are 1 Bantam hen Little LuLu, 2 Bantam Roos Ethel and Queen Latifah, 2 Polish Roos Anita and Balls, 3 White Leghorns, Gladys, Gertrude, and Gail, Big Bertha the Brahma, 1 Silkie gay roo Claire, 7 EE's, 8 Buff Orpingtons, and 2 Barred rocks(we think)   1 Pit bull Hershey, 5 cats Lyoto, Grace, Lilly Beans, Rose and Ivy Ives and 7 fish tanks

Will it matter if the eggs are fertilized? Will the rooster stress the hens?
