Bumblefoot surgery on a turkey, I don't know what to do

Okay, so one of my turkeys has bumblefoot in both feet, the feet are swollen and she can barely even walk. Did a lot of research, watched as many videos as I could find, got all the supplies, and felt like I was ready to take care of this. The only vet in our area surprisingly enough doesn't deal with livestock, it's just a spay/neuter clinic so it isn't an option.

Anyway was feeling pretty confident when I started cutting around the scab on her feet except, in both feet, there was no plug. Nothing. Just pink, healthy tissue. I started worrying because I don't want to maim her by cutting out actual foot tissue. The scabs were both on the bottom of her feet. The right foot has gone down in swelling since I loaded it up with neosporin after an empsom/betadine soak, but it's still slightly swollen. The left foot had to be lanced and I squeezed a lot of pus out that way, but today it's still very swollen. Her feet aren't hot or anything though, so I guess that's a good sign?

But yeah I never found a plug or any other sign of infection. Did I just not look deep enough? How deep can I cut into the fleshy part of the bottom of her foot before I destroy muscle tissue? What should I do? Can I pick up antibiotics at the co-op or aslin finch or anything?
