I keep mine on dirt during spring and summer. I move them to different patches of grass/dirt about once a month. That keeps the poop from building up too much. Spring through fall here are dry enough that the poop dries out pretty fast and doesn't stink much.
During fall/winter they get moved onto my garden beds where they can scratch and play in the dirt. They also get the old garden plants to destroy. I'll actually hoe their poop under a couple times a week to keep the dirt soft and their pen clean. They like to follow the hoe around and grab any worms that get turned up.
