Selling Chicken Eggs

We actually are starting a small custom butcher shop and have so far butchered beef, pigs and deer. We have talked about getting broilers eventually as well.

Eggs will be considered "fresh" up to 60 days after they are laid. Horrible that they call them fresh, when you're practically selling your eggs within the week they've been laid! Most times it takes 45 days for commercial eggs to get from chicken butt, through processing, shipping, sales, refrigerator, to pan.

1) if we are JUST selling eggs, what licenses/ certifications should we have?
2) should our girlies be NPIP certified?
3) what information should be put on the egg carton?
4) why can't i seem to find clear information about this for the state of NC... or did I just miss it in the hours that I have spent reading online?
