Selling Chicken Eggs

When my husband and I talk about the chickens his mind is on the meat factor and putting them in the freezer, so I imagine once I'm comfy with the girls (since this is my first go around), I'll venture in to the hatching part of it. It does sound exciting!

We actually are starting a small custom butcher shop and have so far butchered beef, pigs and deer. We have talked about getting broilers eventually as well.

We try and have some extras, however this year is mostly going to be pullets. And the few eggs I am hatching are games and I can make more selling the extra chicks, then for me to grow them and cull them.
 
Eggs will be considered "fresh" up to 60 days after they are laid. Horrible that they call them fresh, when you're practically selling your eggs within the week they've been laid! Most times it takes 45 days for commercial eggs to get from chicken butt, through processing, shipping, sales, refrigerator, to pan.

This is why I don't like to buy store bought eggs. I can't imagine having an egg that old.
 
So our girlies have been laying for a few weeks now... and we've already some friends and friends of friends that want to purchase eggs. That's a great thing because when we got into this... well no one told me about Chicken math

. So we get 15 eggs a day... and we don't eat that many eggs a week... anyway... I have a few questions I hope someone can help with!

1) if we are JUST selling eggs, what licenses/ certifications should we have?
2) should our girlies be NPIP certified?
3) what information should be put on the egg carton?
4) why can't i seem to find clear information about this for the state of NC... or did I just miss it in the hours that I have spent reading online?

If you are just selling to friends and neighbors you don't need anything. The only reason why you would need paperwork would be if you sold through a store. Even farmers markets don't need paperwork.
