Feed making hardboiled eggs difficult to peel?

I put refrigerated eggs straight into boiling water.
Cook for 13 minutes.
I then put the hot eggs into a bowl of ice water to "shock" them.
I leave them there till cool, then refrigerate or peel and eat.
Works for me..
 
Unless I am making deviled eggs I don't peel my eggs. Instead I cut in half with sharp knife and use a spoon and scoop the eggs out. I have even tried cutting in half length wise and scooping out for deviled eggs, look okay for home eggs but would still peel for company eggs.
 
Steam for 20 minutes in a veggie steamer.than put them in Cold water.( iuse my sink and add some ice)let them sit for 5 to 7 minutes, in the cold ice water.than I tap with a tablespoon.i have found that my freshes eggs will peel.
 
I don't boil them. Haven't boiled eggs in around 20 years. I bake them. I put them in a muffin tin to stand upright (or as upright as an egg can stand) then bake at 325 for 20 minutes. Easy to peel, nice color to the yolks, and although the oven is on there isn't any steam in my small kitchen. I learned this from a lady named Ida when I worked in her diner and her fabulous egg salad sandwiches were part of her soup and sandwich specials one day a week. We were always packed that day!
