It's been a loooonnng time, but - I HAVE GOT THIS!!!  I wouldn't say the feathers 'Just slip out', but they certainly don't need scalding - and I can do turkey tails and wings without needing pliers!

I learned this this fall, from a 1914 Agricultural Service leaflet, and it has made processing (especially turkeys) SO much easier.

 

1.  'The Spot' - draw an imaginary line from the hinge of the jaw upward, tangenital to the back edge of the eye.  That's your path.

2.  'The Tool'  - I'm using an Xacto knife - large handle, blade from Excel #20104.

3.  The same knife is amazing for internally cutting the artery (inside the throat) - bleeding out is much faster and more thorough - and I don't dull my knife by accidentally getting a feather.
