Anyone have some Pumpkin Baking Recipes?

I was wanting to try out some some recipes before the holidays for pumpkin like Pumpkin Drop cookies, Pumpkin Cake Roll or Pumpkin Donut Holes...Anyone have recipes for these or anything else baking with Pumpkin? Thanks in Advance

This is my favorite recipe for Pumpkin Bread...

3 cups sugar
4 eggs
1 tsp. cinnamon
1 tsp. nutmeg
1 cup cooking oil
1 1/2 tsp. salt
*Beat above ingredients then add & beat...
1 cup pumpkin
2/3 cup water
3 cups flour
2 tsp. baking soda.

Grease & flour 3 - 1lb coffee cans. Divide evenly. bake at
350 degrees for 1 hour. Let cool a few minutes then run butter knife between cans & bread, turn over to remove.

I'm thinking of making some Holiday deserts (other than the traditional Pumpkin Pie.... Mom makes that.

So since we have our family Dinners at my parents I like to bring another option other than pumpkin pie. I made a Delicious Pumpkin Cheesecake last yr, it was a Big hit. Unique, yet still a pumpkin desert. But I like to send wkly baked items to Hubby's work & Pumpkin recipes will be a nice Holiday themed item to send in.
 
Oh, I honestly think I could live on pumpkin bread and I don't like sweet spices so it makes no sense. I have been buying cheap coffee the past few times just to get the coffee cans.

A couple years ago we had pumpkin pancakes at IHop and now we have them at home all the time in the fall. I put about 1/3-1/2 canned pumpkin into my basic (or any pancake dry mix)before adding liquids and adjust accordingly. Then you put some Cool Whip on them instead of syrup. YUM My teenaged grandsons wolf them down! I also add the spices I would add to a pumpkin pie...to taste. They are a fall favorite around here.
