I bought rhubarb plants last year at a garden center in 1 gallon pots. All the single stalks were red and healthy. This year the plants are growing like crazy, but 90% of the stalks are green. Will they ever turn red.

 
If they were red before they will turn red again. If they have always been green- then I would suppose that they are just of a green variety. Sun is the key factor to excellent red color. If it is planted in the shade or even just semi shade-- it will be green.
 
Smaller stalks and early stalks are redder than larger and older stalks, and some of it is variety. Almost all small stalks are red. My rhubarb which is in full sun still is mostly green except in early spring. I also would like redder variety, but it's dark in my stomach and that's where I like it!
