when will my coturnix quail start laying eggs

I have two seven week old cot hens and one roo, we started getting one egg a day about 5 days ago. The roo has been crowing for a couple weeks but we've only seen him try to mate once.
Today I've noticed my hens acting very strange, they are both making noise almost consistently and also stretching their necks and wiggling their throats, they also appear to be trying to get the roos attention, is this normal mating behavior?

We have three females and two males, all 7wks old. We did the correct sexing of them yesterday. Today, there was a nest in one corner of the hay and when I came out after supper, one of the hens was laying in the corner. When she got up and ran away and there was an egg there!
