How do you choose a Coturnix male for raising future generations?

I have separated the males from females (actually I have one male in with the females and three males in another cage). What should I look for in deciding which male to keep and mate with the female for future hatches? I realize any visual preferences like size, feather color, lack of deformities and general health come into play. What do you look for in your quails to help you make a final decision in who stays and who goes? Also, do you tend to keep other males around in case anything happens to your main roo?
 
I am no expert, just so you know, but here are my thoughts...

Size! A big male to make bigger birds overall for better meat.

Attitude. No sense in risking surly quail by allowing a mean male to propagate. This means attitude towards people AND his lady quail. If he's abusing the girls and ripping their heads to shreds, he goes in the pot!

Health. Obviously.

Color. It's not a big deal to me, but if you have a preference...

Genetics. Don't want them to be closely related to the hens.
