Is anyone vegetarians? I need ideas for low meat content foods (red meat disagrees with her ulcerative colitis) that I can cook up and freeze in single serve portions for my sister who isn't well. Need high fibre and low dairy. I've been googling and seems lentils are the way to go? She pretty much just eats vegetables but I want to get some protien in there too because I'm sure I've read that just eating vegetables alone isn't healthy either?
I used to be. Lentils, or any other beans, or chickpeas are all good. Rose Elliot's recipes are nice. You can make a really nice meatless minestrone using whatever veges you like, kidney beans, and a tiny teeny little bit of dark miso for flavour. It's really nice. Tofu is another "staple". Beans can make you "windy" though, are they ok for ulcerative colitis? The other source of protein for vegetarians is mushrooms. Mushroom risotto is yummy, and should freeze well.
