Is anyone vegetarians? I need ideas for low meat content foods (red meat disagrees with her ulcerative colitis) that I can cook up and freeze in single serve portions for my sister who isn't well. Need high fibre and low dairy. I've been googling and seems lentils are the way to go? She pretty much just eats vegetables but I want to get some protien in there too because I'm sure I've read that just eating vegetables alone isn't healthy either?
Lentils are good. Partner, who's vegetarian, does a lot of Chinese stir fries with tofu and rice. There's a lot of Indian dishes as well that can be great vegetarian (curries, dal, soup, parathas etc.). Thai curry with tofu instead of meat. Enchiladas with beans and without cheese, maybe with a cashew sauce.
Some cookbooks that we use frequently are Moosewood and Lord Krishna's Cuisine. You can also find a lot of their recipes transcribed online.
Eating just vegetables is missing out on a lot of nutritional needs.
