Is 1 duck egg equal to 2 hen eggs do you think?

that's what i do.  you still may need a little extra flour if it is for baking.

you are going to love cooking/baking with them!

pumpkin pies- should be ok then?

yep...prepare for super fluffy and light crust!  so good.  just feel your way.  you'll know by the consistency if you need more flour.  add little by little.

i would not suggest duck eggs for scrambling, they get a weird texture, but they are really good fried, poached and boiled. 

i really like them when making pancakes especially nice and light.
