Are there any other ways to tell the sexes apart, other then the waddle and their vocals?
Only by the sounds they make or by vent sexing when they are adults. While the wattles can be an indication they are not a reliable telling point. I have personally had males that have the same type of wattles as my hens and have seen photos of hens that had wattles that looked the same as a normal male wattle appears.

Eggs are the best proof of guineas being hens. Guinea eggs take 26 to 28 days to hatch so in a little over a week you should know if there are any fertile eggs.
Guineas mate very quickly and most people will not see their guineas mating. Just because you haven't seen or possibly have not recognized the guineas mating does not mean that it hasn't occurred.
Good luck.
