Hatcheries don't sell mixed breeds though do they?
What breed are these Ideal Hatchery Bantam chicks?

Not usually, if they're well-organized. I've just never seen a bantam variety like that. But, of course, it could just be hatchery-quality.
It looks like Nibbles has a beard... does he? I'd guess Quail d'Anvers cockerel if so. If not, Quail Old English Game.
I support those thoughts.

You're right...now that he's getting older you can see it really well. He's a quail D'Anvers cockerel. He made his first attempt at crowing yesterday. Yikes that was bad.....

UPDATE:
Of the six I originally posted on here:
Lemon-head (white laced red Cornish) turned out to be a boy.
Wisp (Self-blue Belgian D'Anver) turned out to be a boy.
Nibbles (Quail Belgian D'Anver) turned out to be a boy.
Mo (Spangled OEB) turned out to be a girl.
Chinchilla (Blue Quail Belgian D'Anver) turned out to be a girl.
The Black Dread (Sumatra? Black OEB? hard to tell) definitely a girl.

Really? Because I've got an awful lot of hens...24 to be exact.
Oh, good! For a second I thought you meant 3 roosters and 3 hens (which I've had terrible luck with). But, that's fine.
Love the updated pics...Mo doesn't have spots at least from what I can see, wonder if she's another type of OEGB
