Green Tomato Gazpacho

Description:
I know that it's sacrilegious to say this, but I don't care much for fried green tomatoes. Anne fixed this three days ago, and I've even eaten a bowl full for breakfast yesterday and today. Glad we still had some green tomatoes in the garden.

Ingredients:
Three 3-inch green tomatoes (or equivalent)
medium bell pepper
medium cucumber, peeled, seeded, chopped
handful of parsley
handful cilantro
1/4 cup fresh lime juice
medium avocado
clove of garlic
three stalks celery
1 tsp. salt
1 tsp. ground cumin
1-2 Tbsp extra virgin olive oil
1 Tbsp. red wine vinegar
1 tsp. honey (or sugar)
1 cup cold water
black and/or cayenne pepper to taste
1/2 small white onion
1 large jalapeno


Directions:
Mix all the ingredients in a bowl.
Puree in blender until reasonably smooth.
Chill


Optional ingredients:
zucchini
basil
lemon juice
tomatillos
vegetable broth

Sorry, every time I see Gazpacho soup, it's all I can think of.

ETA: It does sound good.
