This is my go-to cold morning (or any time of day) comfort food. It's not so much a 'recipe' as an art.
Ingredients
1-2 eggs
salt and pepper
1T cream (any type will do, probably even half and half would be fine)
1 small handful of grated cheese, whatever kind you have in the fridge that day
a sprinkling of thyme
Equipment
small ramekin
Preheat oven to 350. Butter the ramekin well and crack one or two eggs into it. Sprinkle with salt and pepper. Pour 1T of cream on top, and add the cheese and thyme. Bake for 20-25 minutes. Let cool a bit before digging in. Best served with toast and a fresh old-timey newspaper to read while you eat.
