Ingredients:


chicken breast, boneless
buttermilk
flour, seasoned
bread crumbs or panko
Frank's Buffalo Wing Sauce
real butter
ranch or blue cheese dressing

Cooking Instructions


Cut the boneless chicken into bite sized pieces. Soak in buttermilk for a few hours. Over night is even better. Remove from the buttermilk. Mix together seasoned flour and breadcrumbs/panko. Place the pieces of chicken into the coating mixture and fry in hot oil until golden brown. Set your oven at 250 degrees. In a baking dish place one stick of butter and the Frank's wing sauce. Allow the butter to melt and mix well with the hot sauce while your chicken pieces are frying. Careful when you open the oven as the hot sauce filled steam can burn your nose. While the sauce is hot; roll the fried chicken bites in it making sure to coat each piece. I let them sit about 30 minutes before serving so that the chicken coating can soak up the sauce. There is no exact measurement for this. You can cook as many or as few as you want. For 5 of us I usually use 1 chicken breast per adult. Serve with dressing and a salad or veggie sticks.
