Chicken Barley Soup

    1-1/2 tsp. vegetable oil
    1/2 cup chopped onion
    1/2 cup chopped carrots
    1/2 cup sliced celery
    2-1/2 cups chicken stock
    1 cup water
    1 cup pearled barley
    1/2 lb. cooked chicken
    1 cube chicken bouillon

    Cooking Instructions

    Heat oil in heavy sauce pan over medium heat. Saute onions, carrots and celery for 5 minutes or until onion is tender. Add remaining ingredients, except for the chicken. Increase heat to high and bring to a boil. Reduce heat to low and simmer 40 minutes, stirring occasionally. Add cooked chicken and continue to simmer 5-10 minutes until chicken is heated through and barley is tender.
