Chicken Black Bean Casserole

    2/3C lime juice
    1/3C olive oil
    1/2 t pepper
    2t garlic powder-divided
    2t salt-divided
    1 1/2 LB chicken breast-bite sized pieces
    4C cooked rice (basmati is my favorite)
    2 cans black beans-undrained
    1C chopped fresh cilantro
    1t onion powder
    1t chili powder
    1t cumin

    Cooking Instructions

    Whisk lime juice, oil, pepper and 1t each garlic and salt. Add chicken pieces and stir until coated. Refrigerate 2 hours.
    Combine rice, beans, cilantro., onion powder, chili powder, garlid and salt. Preheat oven to 350*. Cook chicken in a frying pan until white. combine with rice mixture. Bake in a casserole dish 40-45 minutes or until heated through. Makes 9 1 cup servings.
