Ingredients:


2 cups brown rice
4 Tbs. Extra virgin olive oil
1/4 cup lemon or lime juice
1 cup water
1 cup heavy cream
1 tsp paprika
1 tsp chili powder
1 tsp cilantro
1 tsp pepper
1 tsp cumin
2 tsps salt
1 tsp garlic
4-6 chicken breasts

Cooking Instructions


Preheat oven to 350 degrees. Mix all wet and dry ingredients together in bowl and be sure spices are mixed in good then spray rectangle pan with nonstick spray and pour mix in and layer as many chicken breasts on top as you can without overlapping.
Cook for 1 hour covered with tin foil. I then cut chicken up and if its not cmpletely done I put back in for 10 to 20 minutes.
Usually warm burrito shells up and put sour cream and shredded cheese on then spoon half cup mix on it. Then hot sauce too but that's optional.
