</div><div>Ok, ok I never really liked all the hype about Martha Stewart… <i>But </i>I just realized that <i>another </i>one of my favorite cookie recipes is also based on one of <a href="http://www.blogger.com/%E2%80%9Dhttp://www.marthastewart.com/recipe/lemon-poppy-seed-cookies%E2%80%9D">her recipes August 2004.</a> Go figure. </div><div><br />
</div><div>These cookies are AMAZING. Not just a lemon flavour but a “lemon zing” as I’ve read and can not explain it any better.<span>  </span>Chewy, oh the chewiness of cookies that I love. If you like lemon, buy a big bag of lemons and make these cookies and lemon poppy seed muffins, which by the way are a bit more difficult to make!</div><div><br />

</div><div>Ingredients:</div><div> </div><div>1/4 cup fresh lemon juice, plus 3 1/2 teaspoons freshly grated lemon zest (2 to 3 lemons)</div><div>8 ounces (2 sticks) unsalted butter</div><div>2 cups all-purpose flour</div><div>1 teaspoon baking powder</div><div>1/2 teaspoon salt</div><div>1 1/2 cups sugar</div><div>1 large egg</div><div>2 teaspoons pure vanilla extract</div><div>1 tablespoon poppy seeds, plus more for sprinkling</div><div><br />
</div><div> Directions:</div><div><br />
</div><div>1. Preheat oven to 375F.<span>  </span>Simmer lemon juice until reduced to ½. Add 4z (1 stick) butter.</div><div>2. Cream Sugar and other 4z (stick) of butter until fluffy.</div><div>3. Whisk flour, baking powder, salt and poppy seeds.</div><div>4. Add the egg and lemon butter to the creamed sugar/butter. Stir in 2 tsp lemon zest. Mix in flour mixture. </div><div>5. Combine ½ cup sugar and 1 ½ tsp zest.<span>  </span>Roll dough into 1 ½ inch balls and roll in sugar/zest mixture. Flatten to ¼ inch thick 2 inches apart on baking sheet.</div><div>6. Bake 10-11 min until edges are just browned.</div><div><br />

I remember hearing the ice cream truck jangle down the street and enjoying those really expensive, deliciously chewy, ice cream sandwiches.  The kind I still see in frozen treat displays at convenient stores. Yeah convientiently placed there for my craving of tasty goodness.  Well, I found a great recipe in a <a href="http://www.marthastewart.com/recipe/gingersnap-ice-cream-sandwiches">Martha Stewart magazine from 2008</a>.  yeah, yeah, Martha Stewart. <br />

This recipe is for ginger cookies filled with butter-pecan ice cream.  Now I like butter-pecan ice cream but haven't actually spent the money on it yet and put whatever ice cream i have in the freezer.  If I don't have ice cream, these are amazing cookies anyway.  My boyfriend can be a picky sweets eater, but not with these.  Especially if the ground ginger is replaced with fresh grated ginger.   These cookies freeze beautifully and could last a good amount of time I bet. Each bite is not frosty but chewy.<br />
<br />
I just have to share. I make double and triple recipes that turn out great.<br />
<br />
GINGERSNAP ICE CREAM SANDWICHES<br />
<br />
2 ounces (4 TB) unsalted butter, softened<br />
1/4 cup granulated sugar<br />
2 TB unsulfured molasses<br />
1 large egg yolk<br />
3/4 cup all-purpose flour<br />
1/4 teaspoon baking soda<br />
1/2 tsp coarse salt<br />
1 tsp ground ginger (or 6tsp fresh grated ginger root)<br />
1/4 tsp ground allspice<br />
3 TB sanding sugar, for sprinkling (I roll cookies in granulated sugar)<br />
1 pint butter-pecan ice cream, softened slightly<br />
<br />
Preheat oven to 350F.<br />
Cream butter, granulated sugar, and molasses until fluffy. Beat in yolk.<br />
Whisk flour, baking soda, salt, and spices in a small bowl.<br />
Fold in butter mixture 1/3 at a time.<br />
Roll dough into eight 11/2-inch balls, spacing them 2 inches apart on parchment lined baking sheets.<br />
*I do not use parchment paper, just place straight on cookie sheets <br />
Press to form 3-inch disks. Sprinkle with sanding sugar.<br />
*I roll the 11/2-inch dough balls in granulated sugar instead if sprinkling.)<br />
Bake, rotating halfway through, until golden around edges, 11 to 13 mintues.<br />
Transfer cookies to a wire rack, and let cool.<br />
Scoop ice cream onto 4 cookies and top with a second cookie.<br />
Freeze until firm. Let stand 10 minutes before serving.<br />

Have fun grating ginger root!

The yeast, not doing anything. Cleaned out the jar, restarted with warm water and more than a few granules of yeast and slow feeding (every 12hrs when i remember) white granulated sugar. Looks like a milky floating film for now...<br />

Instead, I tried something similar. <i>Maybe</i> it's similar, bacteria right?     Probiotics!<br />

The recipe I actually copied to text seems to be <br />

When I searched google for "I raise Nubian goats and use my own goat milk" I found it...<br />

The recipe was based on 8 cups of milk with 1/2 cup of starter bacteria.<br />

I read the amount of milk makes the same amount of yogurt and I wanted to use tasty Greek yogurt. My <a href="http://www.chobani.com/">Chobani Greek yogurt</a> container holds 32oz so I made the 4cups and used 1/4 starter. <br />
<br />
Now the yogurt tastes like Greek yogurt no doubt; but is thin, watery almost. Author Miller also suggests powdered milk "this is optional but will make a thicker yogurt". I am reluctant to try this because: again it cost money to buy anything. So I reheated it to 110 (twice), even added more yogurt. Now it is even more bitter, a perfect amount to taste actually, but no thicker.<br />

I'll figure it out.<br />

Actually I did figure it out.  When left to settle in the fridge and with fast cooling the yogurt thickened. yay!<br />
<br />

Measure milk per container(s). <br />
Bring milk to 185F. <br />
Cool to 110F. [Cultures are inactive below 95F and die above 120F.]<br />
Add pre-maid yogurt as a bacteria starter. <br />
Incubate in a preheated place for 7+ hours: depending on preference of bacteria amount and intensity. <br />
Flavour to preference, Refrigerate and enjoy.<br />
-This growth process produces some type of gas expansion and does not allow for a tight fitting lid, so do not.

This morning I woke up and decided it is time to grow my own yeast. Why? Because I can. So I searched my two favorite sources: teachers websites and public databases of scientific articles.<br />

This gave me information on medium, feed, sterilization and more. This Doctor and President of this particular biology lab also seems to have many linking sites for biology classes/studies.<br />

No need to sterilize because the yeast kills other bacteria or interferes with other organism growth. <br />

Temperatures should be relatively high which anyone who has watched bread rise knows.  My house is not usually warm because I mainly heat with wood and let it dwindle at night. But I'll give it a try anyway by placing it in the highest corner cabinet of my kitchen where the temp currently read 69F.<br />
<br />
<b>Yeast  Culture</b>    Fleishmann's Active Dry Yeast Ingredients: yeast, sorbitan monostearate. (I'll find out what that is later)<br />
<b>Medium</b>             Well water<br />
<b>Food</b>                   Great Value Light Corn Syrup Ingredients: light corn syrup, water, high fructose corn syrup (that is really what I want), salt, vanilla<br />
<b>Container</b>          Glass peanut butter jar with lid ajar for aerobic needs<br />
<b>Temperature</b>     a range of 50F-80F<br />

I wander whether the extra ingredients in the corn syrup; vanilla especially, will change the flavor of the yeast.  If the yeast does not grow I may have to find a medium that contains extra elements it may need, such as nitrogen. Or find a warmer spot. <br />
<br />
Will this be a liquid yeast? How do I make dry yeast?

This morning I woke up to that painful sound of a screaching rabbit. Look out the window and see a large tail sweeping behind the chicken waterer.  FOX  ...run and tell the man, get the camera... Here are some shots for you.  I need a new camera and a better lens as can be told by the photos but what can I do?<br />

I believe what luered this fox here is the fact that I recently released a rabbit into the yard which was injured by another rabbit.  The rabbit has stayed close by this week and left his scent everywhere. <br />
