Cranberry Bread

    2 c. all purpose flour
    1 c. granulated sugar
    1-1/2 tsp. baking powder
    1/2 tsp. baking soda
    1/4 tsp. salt
    1 beaten egg
    3/4 c. orange juice
    2 tbsp melted butter or margarine
    1 tbsp grated orange zest
    1/2 c. chopped pecans (optional)
    2 c. fresh cranberries, coarsely chopped

    Cooking Instructions

    Preheat oven to 350°. Sift together first 5 dry ingredients. Moisten with egg, orange juice and melted butter. Fold in orange zest, cranberries and pecans. Pour into greased 9" x 5" x 3" loaf pan and bake 50 to 60 minutes until barely browned and toothpick comes out cleanly.

    Note: Makes one loaf, doubles well. Freezes very well and makes a nice holiday gift.
