Ingredients:


1 lb. Chicken breasts, cut into bite-sized pieces
1/4 c. Olive oil
1/4 c. Chopped, fresh rosemary
1 1/2 tbsp Garlic powder
Salt and pepper to taste
4 c. Fresh broccoli cut into bite-sized pieces, steamed
1 lb. Bowtie pasta, cooked al dente
1/4 c. Olive oil
2 c. Cream
1 c. Grated parmesan cheese

Cooking Instructions


Pour 1/4 cup olive oil into a large frying pan and heat to medium/medium-high. Add chicken and sprinkle with the rosemary, garlic powder, and a little bit of salt and pepper (don't add too much - you can always add more later if needed). Saute chicken in olive oil until done. Remove from pan. Add 1/4 cup olive oil and heat to medium-high. Whisk in cream. Continue stirring until the cream is nice and hot, then add the parmesan cheese. Cook and stir until the parmesan is starting to melt. Turn of the heat. Adjust salt and pepper if needed. Add cooked chicken, steamed broccoli, and al dente pasta to the pan and toss well. Serve with additional parmesan cheese.


Note: To complete your meal, serve with a salad of mixed greens and balsamic vinaigrette, crusty Italian bread, and a hearty glass of good Sangiovese.
