2 cups flour
2 cups sugar
1 tsp. salt
1 tsp. baking soda
1 (8oz) can crushed pineapple (undrained)
2 cups chopped bananas
1 tsp. cinnamon
3 eggs ( beaten)
1~ 1/2 cup vegetable oil
1~ 1/2 tsp. vanilla
2 cups walnuts or pecans chopped (optional)
Mix dry ingreddients in large bowl.
Add eggs and oil to mixture.
Fold in pinapple, bananas and nuts.
Approximately 1/2 cup of the nuts may be reserved for garnish on frosting.
Spoon batter into greased & floured pan.
Bake at 350 for 25- 30 minutes or until done.
Cool in pan 10 minutes, then remove and cool competely.
Maybe be served as is or with cream cheese frosting with nuts sprinkled over the top.
