1 c. quick-cooking oatmeal
3 tbsp flour
1/4 tsp. baking powder
2 c. sugar
1 c. real butter
1 c. finely chopped pecans
1 tsp. each of vanilla, almond and lemon
Preheat oven to 350°. Melt butter and place in mixing bowl with sugar, mix to combine. Add eggs and flavorings, mix to combine. Add oatmeal, flour, baking powder and pecan, mix to combine. Drop by teaspoonfuls, 2 inches apart, onto parchment lined baking sheets. Cook for approximately 12 minutes or until edges start to brown very slightly. Let cool on parchment completely before removing. Makes about 7 dozen lace cookies.
Note: Make sure you use the 1 minute quick cooking oatmeal! If you don't have parchment, use foil but let the cookies cool on the foil and then slide a knife under them to remove. Parchment works the best though.
