Ingredients:


1 large Chicken (cut up, skin left on)
2-3 tbsp Olive Oil
1 head Garlic (sliced)
2-3 sprigs Thyme (fresh)
1 large splash Sherry
2 tbsp Soy sauce
3 tbsp Honey
1 Lemon (thinly sliced)
1 bunch Italian Parsley (chopped)

Cooking Instructions


Season chicken with salt and pepper to taste. Heat olive oil in large saute' pan. Brown chicken over high heat with garlic and thyme for 3-4 minutes on each side until golden brown. Add sherry and simmer until reduced in half. Add soy sauce and honey , mix well, turn chicken to coat. Add a splash of water and lemon slices. Simmer to reduce liquid until syrupy, about 10 minutes. Transfer chicken to a serving platter and sprinkle with parsley.

Note: If you cook the chicken in batches, return all the chicken to pan before you proceed with the sherry. Great served with wild rice and green beans!
