Meatloaf Gone Healthier

    1/2 pound ground turkey or chicken
    1/2 pound lean ground beef
    1/2 large onion, chopped
    2 cloves garlic, minced
    1/2 tsp. salt
    1/2 tsp. black pepper
    1 large pinch dried thyme
    1 egg, beaten
    1/2 cup old fashioned oatmeal
    1 can tomato soup
    1 tbsp each steak sauce and Worcestershire Sauce
    1 tsp. soy sauce
    hot sauce to taste

    Cooking Instructions

    Preheat oven to 350°. Mix all ingredients together, reserving some tomato soup for the top. Press mixture into a loaf pan, or freeform on a parchment lined baking sheet or pan. Spread remaining tomato over the top and bake for one hour or until browned and crusty.

    Note: If the lower fat content is not an issue, you can use ground chuck instead of the lean ground beef, which gives a richer flavor. To be truly decadent, drape the top with strips of uncooked bacon and bake until bacon is crispy.
