Mediterranean Chick Pea Salami Olive Salad

    1 head Romaine lettuce, torn into bite size pieces
    4-6 scallions (green onions), thinly sliced
    1 red bell pepper, seeded & chopped
    2 tomatoes, seeded & chopped
    1 cup black olives, pitted
    1 tbsp chopped fresh oregano
    1 can chick peas (garbanzos), rinsed & drained
    8 oz. good salami, thinly sliced & quartered

    Cooking Instructions

    Toss all ingredients together in a large bowl. Dress with Balsamic Vinaigrette Dressing, as follows: 2-1/2 T Balsamic vinegar, 6 T olive oil, 2 T water, 1/2 tsp salt, 1/2 tsp black pepper, 1/2 cup finely chopped flat-leaf Italian parsley, 2 cloves minced garlic. Whisk or shake well.
